An Easy Family Meal: Starter: Salad

Nothing is easier than starting a nice family meal than with salad. Get lots of fresh veggies and chop away. Here's a recipe for a really simple salad dressing that will go great with the Italian theme.

3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon dried oregano
salt and pepper to taste

Mix together olive oil, balsamic vinegar, oregano, salt and pepper.

An Easy Family Meal: Side Dish: Pasta

Pasta is an extremely easy side dish for the chicken. Especially since the mushrooms and masala wine will complement it so well. It can't get any easier than water, a dash of salt and a box of pasta.

An Easy Family Meal: Entree: Chicken Masala

Everyone should know how to make a good chicken masala. I chose this version because it's extremely simple to make. If you can't find masala wine most grocery stores have a masala marinade.

INGREDIENTS:

4 boneless chicken breast halves
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried basil
3 tablespoons butter
3 tablespoons olive oil
1/2 to 1 cup sliced mushrooms
1/2 cup Marsala wine

PREPARATION:

Pound chicken to 1/4" thickness between 2 sheets of saran. Combine flour, salt, pepper, and basil; mix well. Heat oil and butter in a heavy non-stick skillet over medium high heat. Dredge chicken in seasoned flour mixture. Cook chicken until lightly browned on first side (about 2 minutes). Turn chicken and add mushrooms around the chicken pieces. Cook about 2 minutes more, until lightly browned; stir. Add Marsala wine to pan. Cover and simmer 10 minutes.
